The missions themselves are (in no particular order):
Gather Information
Cheating in Game
Kidnapping of a Noble
Pickpocket
Bag Snatching
Robbing the Innocent
Burglary of a bourgeois
Suicide Mission
Participation in a treasure hunt
Clash in Public
Murder of a wealthy merchant

and I believe that's all of them. At least that's all I can think of.

- gathering information : 65% necromancer (for some reason lion mage and all wolven have a terrible success rate, only the necro from my experience has a decent one)."

but I'm hoping to see if I can get more information from people on what their best rates are. Hopefully I'll be able to compile a list of the best couple units from each faction for each mission and then stick that information in the wiki for easy reference.

good initiative, i'll try to upload the list with my available units (im missing only legendaries). As a final note i noticed that your success chance changes with your unit level but it is hard to determine the correct formula. Below the units that have the highest chance:

Gather Information -> Necro lvl 3 or 4 65%
Cheating in Game -> Lion Mage (lvl 1 is 45% chance, i guess it can go to 50%+ when levelled)
Kidnapping of a Noble -> Gargoyle 60%
Pickpocket -> Sparkling 99%
Bag Snatching -> Sparkling 90% / Skull warrior 85%
Robbing the Innocent -> Skull warrior 90%
Burglary of a bourgeois -> 85% gargoyle
Suicide Mission -> fang warrior 75% / gargoyle 75%
Participation in a treasure hunt -> Sparkling or wolven hunter 90%
Clash in Public -> Skull warrior 60% (lvl 2) / rune guardian 55% (lvl 2) . Pretty sure PoB can have a better chance.
Murder of a wealthy merchant -> Not available yet

as a general guideline, if you start a new company you better choose one with the skull or with the sparkling if you plan to make money via quests

i add one more interesting thing i noticed: the skills you take actually influence the outcome of the mission. For some reason in "gather information", my lvl 3 necro with respite and mastery of arcana has a better chance than the lvl 4 one with morbid explosion and wave of the death

With the missions I currently have available, my lion unit pool has these percentages:

Robbing the Innocent:
Lion of War - 99% (level 4, but only skilled to level 1)
Knight of the Lion - 90% (Level 5, but only skilled to level 2)
Chimera - 85% (level 1)

Participation in a treasure hunt:
Sparkling of Light - 90% (level 3)
Lion of War - 75%

Bag Snatching:
Lion of War - 90%
Sparkling of Light - 85%
Chimera - 70%

Gather Information:
Wizard - 75% (Level 5, took mastery and scourge and chastisement)
Valkyrie - 70% (Level 4, auspises, mastery, incarnation)
Wizard - 65% (Level 5, took recovery and seal of dellar'n and chastisement)

Burglary of a Bourgeois:
Chimera - 80%
Archer - 75% (level 3, accuracy/double shot)
Valk - 70%
Lion - 70%

Cheating in Game: (is oddly very difficult for everything I have. only had one unit above 50%.)
Wizard - 55% (mastery/scourge one)

Kidnapping of a noble: (also very difficult. best chance 60%)
Lion - 60%
Sparkling - 60%

Murder of a Wealthy Merchant:
Lion - 99%
Archer - 99%
Valk - 95%
Knight - 90%
Swordsman - 80% (level 2 and level 3 same result; took parry and taunt for 3, just parry for 2)
Chimera - 75%
Sparkling - 70%

Clack in public I do not currently have available, since I just finished it a little while ago. But from memory...
Chimera - 60%
Knight - 50%
